  • 1 cup chopped carrots fresh or frozen
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 6 cups chicken broth low sodium preferred
  • 2 teaspoons dried thyme or to taste

  • 1 tablespoon olive oil for sautéing

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Sauté chopped onions, carrots, and celery until they are softened, about 5 minutes.
