2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon salt 1 cup unsalted butter room temperature 1 cup granulated sugar ½ cup packed light brown sugar 1 large egg
1. Preheat oven to 350°F and prepare a 9-inch square pan with butter or parchment paper. 2. Toss chopped apples with lemon juice in a bowl. 3. Whisk together flour, baking powder, baking soda, and salt in another bowl.
4. Cream butter in a mixing bowl, then add sugars and beat until fluffy. 5. Mix in egg and vanilla until combined. 6. Alternate adding dry ingredients and sour cream, mixing until just smooth.
7. Gently fold in diced apples. 8. Spread batter evenly in the prepared pan and sprinkle crumb topping over it. Bake for 50 minutes, then cool before serving.
