– 2 pounds of chicken breasts chopped into cubes – ¼ cup olive oil – ¼ cup soy sauce – 2 tablespoons honey – 2 cloves garlic minced – 1 teaspoon smoked paprika – 1 teaspoon ground cumin – Juice of 1 lemon – Salt and pepper to taste – Chopped fresh herbs for garnish; optional
1. In a bowl, whisk together the olive oil, soy sauce, honey, minced garlic, smoked paprika, ground cumin, lemon juice, salt, and pepper to create the marinade. 2. Place the cubed chicken breasts in a shallow dish and pour the marinade over the chicken. Ensure the chicken pieces are well coated. Cover the dish and refrigerate for at least 30 minutes to an hour. For more intense flavor, marinate for up to 4 hours, if time allows.
3. Thread the marinated chicken pieces onto skewers, alternating with your choice of vegetables like bell peppers, onions, and cherry tomatoes. 4. Preheat the oven to 400°F (200°C) and bake the skewers on a lined baking sheet for approximately 20-25 minutes, turning halfway through, until the chicken is cooked and the edges are slightly charred.
5. Once cooked, remove the kabobs from the heat and let them rest for a few minutes before serving. 6. Optionally, garnish with chopped fresh herbs before serving for an extra pop of flavor.
