– 1 pound fresh salmon cooked and flaked – 1 cup breadcrumbs – 2 large eggs beaten – 2 tablespoons mayonnaise – 1 tablespoon Dijon mustard – 2 green onions finely chopped – 2 tablespoons fresh parsley chopped – 1 teaspoon lemon zest – Salt and pepper to taste – 3 tablespoons vegetable oil (for frying) – Lemon wedges for serving


1. In a large mixing bowl, combine the flaked salmon, breadcrumbs, beaten eggs, mayonnaise, Dijon mustard, chopped green onions, parsley, lemon zest, salt, and pepper. Mix until well combined. 2.
