– 8 oz elbow macaroni – 3 cups cheddar cheese shredded – 2 cups Pepper Jack cheese shredded – ¼ cup unsalted butter – ¼ cup all-purpose flour – 2 ½ cups whole milk – ½ teaspoon salt – ¼ teaspoon black pepper – ¼ teaspoon paprika – 2 jalapeños finely chopped (optional for extra heat) – 1 cup breadcrumbs


1. Preheat your oven to 350°F (175°C). Cook the elbow macaroni according to package instructions until al dente, then drain and set aside. 2. In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes to create a roux. 3. Gradually pour in the milk, whisking constantly to avoid lumps. Continue cooking and stirring until the mixture thickens, usually about 5-7 minutes.
