– 1 kg firm Plum tomatoes – 1 cup white vinegar – 1 cup water – ¼ cup sugar – 2 tablespoons salt – 1 teaspoon mustard seeds – 1 teaspoon coriander seeds – 1 teaspoon cumin seeds – ½ teaspoon red pepper flakes adjust to taste – 4 cloves garlic sliced – Fresh herbs for added flavor (optional)


1. Wash and dry the tomatoes. Cut them into slices or wedges, depending on your preference. If using cherry tomatoes, you can leave them whole or halve them. 2. In a saucepan, combine white vinegar, water, sugar, salt, mustard seeds, coriander seeds, cumin seeds, and red pepper flakes. Bring the mixture to a boil, stirring to dissolve the sugar and salt. Let it simmer for 5 minutes.
