Easy Pork Curry Recipe

– 1.5 lbs. pork shoulder cut into bite-sized pieces – 1 onion finely chopped – 3 cloves garlic minced – 1-inch piece of ginger grated – 2 tomatoes chopped – 2 tablespoons curry powder – 1 teaspoon ground cumin – 1 teaspoon ground coriander – ½ teaspoon turmeric – Salt and pepper to taste – 2 tablespoons cooking oil – Fresh cilantro for garnish (optional)

Ingredients

1. Season the pork pieces with salt, pepper, and half of the curry powder. 2. In a pan over medium heat, heat the cooking oil. Brown the pork pieces on all sides. Once browned, set aside. 3. In the same pan, add a bit more oil if needed. Sauté the chopped onions until golden brown.

4. Add minced garlic and grated ginger. Sauté for another minute until fragrant. 5. Add the remaining curry powder, ground cumin, ground coriander, and turmeric to the pan. Stir well. 6. Toss in the chopped tomatoes and cook until they break down, forming a thick sauce. 7. Place the browned pork pieces into a slow cooker. Pour the tomato-based sauce over the pork.
