Ingredients

  • 1.5 lbs. pork shoulder cut into bite-sized pieces
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1-inch piece of ginger grated
  • 2 tomatoes chopped
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons cooking oil
  • Fresh cilantro for garnish (optional)

Instructions

  • Season the pork pieces with salt, pepper, and half of the curry powder.
  • In a pan over medium heat, heat the cooking oil. Brown the pork pieces on all sides. Once browned, set aside.
  • In the same pan, add a bit more oil if needed. Saut� the chopped onions until golden brown.
  • Add minced garlic and grated ginger. Saut� for another minute until fragrant.
  • Add the remaining curry powder, ground cumin, ground coriander, and turmeric to the pan. Stir well.
  • Toss in the chopped tomatoes and cook until they break down, forming a thick sauce.
  • Place the browned pork pieces into a slow cooker. Pour the tomato-based sauce over the pork.
  • Cook on low for 4-6 hours or until the pork is tender and flavorful.
  • Garnish with fresh cilantro if desired.
  • Serve the pork curry over rice or with your favorite side.
