Instructions
In a large bowl, mix 1 cup cottage cheese, ⅓ cup all-purpose flour, 3 lightly beaten eggs, and 2 tablespoons vegetable oil until smooth.
Spray a large skillet with cooking spray and heat over medium heat.
Pour ⅓ cup of batter onto the heated skillet for each pancake.
Cook until bubbles appear on the surface, about 3 to 5 minutes.
Flip the pancakes and cook until browned on the other side, about 3 to 4 minutes.
Transfer cooked pancakes to a plate and keep warm.
Repeat with the remaining batter.
