Ingredients

  • 2 cans Albacore Tuna 5.5 oz each
  • 5 baby carrots chopped
  • 1/4 cup petite peas frozen
  • 1 lg stalk celery chopped
  • 2 tbsp chopped onion chopped finely
  • 1 tsp Lemon pepper seasoning
  • 1 cup shredded Colbyjack cheese or shredded cheddar
  • 1 lg egg
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream

Instructions

  • Preheat oven to 350°F.
  • Grease a 9" x 9" or 9" x 11" oven-proof pan or small casserole bowl with avocado oil.
  • Chop onion, celery, and carrots.
  • In a medium bowl, mix tuna, mayonnaise, sour cream, egg, lemon pepper seasoning, chopped vegetables, peas, and half of the cheese.
  • Pour mixture into prepared pan and sprinkle remaining cheese on top.
  • Bake for 30 minutes or until cheese is melted and casserole is hot and bubbly.
  • Cut into 4 servings and serve warm.
