Instructions

  • Preheat your oven to 350°F (175°C) and grease or line a cake pan with parchment paper.
  • In a small bowl, combine the non-dairy milk and vinegar or lemon juice. Let it sit for a few minutes to curdle slightly, creating a vegan "buttermilk."
  • In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
  • Add the vegan butter or oil and vanilla extract to the dry ingredients. Mix until the mixture resembles coarse crumbs.
  • Gradually pour in the non-dairy milk mixture while stirring continuously, until a smooth batter forms. Be careful not to overmix.
  • If using any optional flavorings or add-ins, gently fold them into the batter until evenly distributed.
  • Pour the batter into the prepared cake pan and spread it out evenly.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.
  • After cooling, carefully transfer the cake to a wire rack to cool completely.
  • Once cooled, you can frost the cake with your favorite vegan frosting or enjoy it as is.
