Crispy Southern Fried Chicken Recipe

– Large plastic bag – Cookie sheet or tray – Large skillet (cast iron recommended) – Paper Towels


– 4 pound chicken, cut into pieces – 2 cups  all-purpose flour for coating – salt and pepper to taste – 1 cup buttermilk – 1 tsp  paprika – 2 quarts vegetable oil for frying


– Skin and prepare chicken pieces. – Season flour in a plastic bag with paprika, salt, and pepper. – Dip chicken in buttermilk, then coat in seasoned flour. – Allow chicken to sit until flour forms a paste-like consistency.


– Heat vegetable oil in skillet until very hot. – Brown chicken on both sides in hot oil. – Cover skillet and cook chicken for 30 minutes. – Remove cover, raise heat, and continue frying until crispy.


– Drain fried chicken on paper towels. – Keep finished chicken warm in oven while frying remaining batches.
