– 1 pound large shrimp peeled and deveined – 1 pound scallops – 1 pound white fish fillets (like cod or tilapia) cut into chunks – 1 can tomatoes diced – 4 cloves garlic minced – 1 onion finely chopped – 1 bell pepper diced – 2 tablespoons olive oil – Salt and pepper to taste – Chopped fresh parsley for garnish – Lemon wedges for serving


1. Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, and bell pepper. Sauté for about 3-4 minutes until softened. 2. Add the diced tomatoes (with their juices) to the skillet. Stir and let it simmer for another 5 minutes to create a flavorful base.


3. Layer the seafood into the skillet. Start with the fish chunks, then add the shrimp and scallops on top. Season with salt and pepper. 4. Cover the skillet and let the seafood cook for about 6-8 minutes. Check periodically—once the shrimp turns pink and the fish flakes easily with a fork, it’s ready.


5. Once cooked, sprinkle chopped parsley over the top for freshness. 6. Serve the seafood medley straight from the skillet or transfer it to a serving dish. Squeeze some lemon wedges over the seafood before enjoying.
