Ingredients

  • 2 pounds boneless lamb loin or rack
  • 2 tbsp fresh rosemary, finely chopped
  • 2 tbsp fresh thyme, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • 4 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  • Preheat oven to 375�F (190�C).
  • Mix herbs, garlic, Dijon mustard, breadcrumbs, and olive oil.
  • Season lamb and sear in a hot skillet.
  • Brush lamb with Dijon mustard, then coat with herb mixture.
  • Roast in the oven until desired doneness.
