Ingredients

  • 1 cup whole milk
  • 3 cups heavy cream
  • 2,3/4 tsp gelatin
  • 1 tsp teaspoon vanilla extract
  • 6 tbsp �sugar
  • pinch of kosher salt
  • zest of one lemon
  • 1/4 cup lemon juice

Instructions

  • Hydrate gelatin in milk and set aside.
  • Heat cream with vanilla, sugar, and salt until steaming.
  • Add gelatin-milk mixture and heat to 135�F.
  • Remove from heat, strain, and mix in lemon juice and zest.
  • Pour into molds, refrigerate for 4 hours until set.
