Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • cup unsalted butter softened
  • cup granulated sugar
  • A pinch of salt

For the Filling:

  • 1 cup shredded coconut
  • cup sweetened condensed milk
  • cup lime juice
  • Zest of one lime

Instructions

  • Preheat the oven to 350�F (175�C). Line a 9x9-inch baking pan with parchment paper.
  • In a bowl, combine the flour, softened butter, sugar, and a pinch of salt. Press the mixture into the bottom of the prepared pan to form the crust.
  • Bake the crust in the preheated oven for 15 minutes or until lightly golden. Remove and let it cool slightly.
  • In another bowl, mix together the shredded coconut, sweetened condensed milk, lime juice, and lime zest to create the filling.
  • Spread the coconut-lime filling evenly over the baked crust. Return to the oven and bake for an additional 15-20 minutes, or until the edges are golden.
  • Allow the bars to cool in the pan for about 30 minutes, then transfer to a cooling rack to cool completely.
