  • 1 large orange preferably organic, for zest and peel
  • 4 cloves whole cloves
  • 2 cinnamon sticks cinnamon sticks
  • 4 cups water

Instructions

  • Begin by zesting the orange carefully with a vegetable peeler, then peel off strips of the orange peel, avoiding the white pith.
  • Add the orange peel strips and zest to the large saucepan along with the water. Bring the mixture to a gentle simmer over medium heat.
  • Stir in the whole cloves and drop in the cinnamon sticks, then reduce the heat to low so the mixture just bubbles softly.
  • Simmer gently, uncovered, for about 20–30 minutes, allowing the aromas to meld and the liquid to slightly thicken, with steam gently escaping and the kitchen filling with warm, citrusy spice scents.
  • Once the mixture has infused and the liquid has taken on a fragrant, amber hue, turn off the heat and remove the cinnamon sticks and large orange peel pieces.
  • Pour the infused liquid into small mugs or bowls if serving warm, or transfer to a bottle or jar for storage and re-simmering later.
