Pound chicken breasts to even thickness
Season both sides with salt, pepper, and optional paprika
Sauté spinach and garlic briefly until wilted
Remove from heat and mix with shredded cheese
Place filling on one side of each chicken breast
Fold or roll chicken and secure with toothpicks
Heat olive oil in a skillet over medium heat
Sear stuffed chicken until golden on both sides
Cover and cook until chicken reaches 165°F (74°C)
Drizzle lemon juice before serving
