  • Chicken breasts boneless and skinless – 2 pieces
  • Fresh spinach roughly chopped – 2 cups
  • Heavy cream – 1 cup
  • Parmesan cheese freshly grated – 1 cup
  • Garlic minced – 3 cloves
  • Unsalted butter – 2 tablespoons
  • Fettuccine or linguine cooked al dente – 8 oz
  • Salt – to taste
  • Freshly cracked black pepper – to taste

Instructions

  • Cook pasta in salted boiling water until al dente
  • Drain pasta and reserve a small amount of cooking water
  • Season chicken breasts with salt and pepper
  • Melt butter in a skillet over medium heat
  • Add chicken and cook until golden and fully cooked
  • Remove chicken and slice into strips
  • In the same skillet, sauté garlic until fragrant
  • Pour in heavy cream and bring to a gentle simmer
  • Stir in Parmesan cheese until sauce thickens
  • Add spinach and cook until wilted
  • Toss cooked pasta and sliced chicken into the sauce
  • Add a splash of pasta water if needed
  • Season with salt and pepper before serving
