  • Chicken breasts skinless and boneless – 2 pieces
  • Fresh spinach baby spinach preferred – 4 cups
  • Olive oil extra virgin – 2 tablespoons
  • Garlic minced – 2 cloves
  • Lemon juice freshly squeezed – 1 lemon
  • Salt – to taste
  • Freshly cracked black pepper – to taste
  • Feta cheese nuts, seeds, or fresh herbs (optional toppings) – 1/4 cup (optional)

Instructions

  • Season chicken breasts with salt, pepper, and a drizzle of olive oil
  • Heat 1 tablespoon of olive oil in a skillet over medium heat
  • Add chicken breasts and cook for 6–7 minutes per side, until fully cooked and golden
  • Remove chicken and let it rest for a few minutes before slicing
  • In the same skillet, add garlic and cook for about 30 seconds until fragrant
  • Add spinach and sauté until wilted, adding a splash of lemon juice
  • Slice chicken into strips and assemble into meal prep containers
  • Top with sautéed spinach and any optional toppings (feta, nuts, seeds, or herbs)
  • Drizzle with remaining lemon juice before serving

Notes

For extra flavor, add herbs or a drizzle of tahini on top. Keep greens vibrant by not overcooking during reheating.
