  • Jasmine rice rinsed – 1 cup
  • Water – 2 cups
  • Chicken breasts boneless and skinless – 2 pieces
  • Garlic minced – 2 cloves
  • Fresh spinach roughly chopped – 2 cups
  • Olive oil – 1 tablespoon
  • Lemon juice – 1 tablespoon
  • Paprika optional – 1 pinch
  • Salt – to taste
  • Freshly cracked black pepper – to taste

Instructions

  • Combine rinsed rice and water in a saucepan
  • Bring to a boil, then cover and simmer until rice is tender
  • Slice chicken breasts into strips
  • Heat olive oil in a skillet over medium heat
  • Add chicken and cook until lightly golden
  • Add minced garlic and sauté briefly
  • Add chopped spinach and cook until wilted
  • Stir in lemon juice and optional paprika
  • Season with salt and pepper
  • Serve chicken mixture over warm rice

Notes
