Season chicken breasts with salt and pepper
Heat olive oil in a large skillet over medium-high heat
Add chicken breasts and cook for 6–7 minutes per side, until golden brown and fully cooked (internal temperature of 165°F or 74°C)
Remove chicken from the skillet and set aside
In the same skillet, add minced garlic and sauté for 30 seconds until fragrant
Add peas to the skillet and cook for 2–3 minutes until heated through
Stir in fresh mint and lemon juice
Return chicken to the skillet and toss to combine with peas and mint
Season with additional salt and pepper if needed
Serve warm
