Ingredients

  • Chicken breasts boneless and skinless – 4 pieces
  • Fresh or frozen peas thawed – 1 cup
  • Fresh mint chopped – 1/4 cup
  • Garlic minced – 2 cloves
  • Lemon juice freshly squeezed – 1 tablespoon
  • Extra-virgin olive oil – 3 tablespoons
  • Salt – to taste
  • Freshly cracked black pepper – to taste

Instructions

  • Season chicken breasts with salt and pepper
  • Heat olive oil in a large skillet over medium-high heat
  • Add chicken breasts and cook for 6–7 minutes per side, until golden brown and fully cooked (internal temperature of 165°F or 74°C)
  • Remove chicken from the skillet and set aside
  • In the same skillet, add minced garlic and sauté for 30 seconds until fragrant
  • Add peas to the skillet and cook for 2–3 minutes until heated through
  • Stir in fresh mint and lemon juice
  • Return chicken to the skillet and toss to combine with peas and mint
  • Season with additional salt and pepper if needed
  • Serve warm
