Heat olive oil in a large skillet over medium-high heat. Add the onion and cook for 2 minutes until softened.
Add the zucchini, garlic, thyme, oregano, cayenne, salt, and pepper. Cook for 3 to 4 minutes, stirring occasionally, until the zucchini is just tender.
Stir in the chickpeas, diced tomatoes, and maple syrup. Cover and simmer for 5 minutes.
Remove the lid and stir in the fresh basil and lemon juice. Cook for another 1 to 2 minutes, allowing excess liquid to reduce slightly.
Taste and adjust the seasoning, then serve warm with toasted bread and extra fresh basil.
