Ingredients

  • 4 pieces boneless, skinless chicken breasts or thighs if preferred
  • 3 limes fresh limes for juice and zest

Instructions

  • Slice one lime in half and juice all three limes into a large bowl, then add the minced garlic, chopped cilantro (set aside some for garnish), olive oil, salt, and pepper. Whisk together until well combined to create a vibrant marinade base.
  • Place the chicken breasts in the marinade, turning to coat each piece thoroughly. Cover the bowl and let it marinate at least 15 minutes at room temperature, or up to 2 hours in the fridge for more flavor infusion.
  • Preheat your grill or grill pan over medium-high heat until hot and slightly smoky. Remove the chicken from marinade, letting excess drip off, and place it onto the grill.
  • Grill the chicken for about 6-8 minutes per side, until grill marks appear and the internal temperature reaches 165°F (75°C). During cooking, you should hear a steady sizzle and see the chicken developing a nice char with juices bubbling inside.
  • Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes. This helps keep the juices locked inside and ensures tender, juicy bites.
  • Slice the rested chicken into thick strips, revealing a juicy, tender interior with a lightly charred exterior. Garnish with the reserved chopped cilantro and a wedge of lime on the side for extra zest.

Notes

For extra flavor, sprinkle additional chopped cilantro and a squeeze of fresh lime over the finished chicken before serving. Serve with rice, salad, or in tacos for a complete meal.
