For the Cookie Dough

  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • 4 oz cream cheese softened
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup crushed Oreo cookies

For the Cheesecake Filling

  • 4 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

For Topping

  • 4 Oreo cookies roughly crushed

Instructions

  • Beat the softened butter until smooth and creamy.
  • Add the brown sugar to the butter.
  • Mix until well combined.
  • In a small bowl, combine the softened cream cheese and vanilla extract. Mix until smooth.
  • Add the cream cheese mixture to the butter mixture.
  • Whisk until smooth and fully incorporated.
  • Add the flour, baking soda, and salt.
  • Mix until a soft cookie dough forms.
  • Stir until the dough comes together and no dry flour remains.
  • Add the crushed Oreo cookies.
  • Fold the Oreo pieces evenly into the dough.
  • In a separate bowl, combine the cream cheese, powdered sugar, and vanilla extract until smooth to make the cheesecake filling.
  • Scoop portions of cookie dough and flatten slightly. Place a small amount of cheesecake filling in the center and seal the dough around it.
  • Place the filled cookie dough balls on a lined baking sheet, leaving space between each cookie.
  • Bake at 350°F (175°C) for 10–12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack.
  • Top the cooled cookies with additional cheesecake filling and garnish with Oreo pieces before serving.
