Mix until a soft cookie dough forms.
Stir until the dough comes together and no dry flour remains.
Add the crushed Oreo cookies.
Fold the Oreo pieces evenly into the dough.
In a separate bowl, combine the cream cheese, powdered sugar, and vanilla extract until smooth to make the cheesecake filling.
Scoop portions of cookie dough and flatten slightly. Place a small amount of cheesecake filling in the center and seal the dough around it.
Place the filled cookie dough balls on a lined baking sheet, leaving space between each cookie.
Bake at 350°F (175°C) for 10–12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack.
Top the cooled cookies with additional cheesecake filling and garnish with Oreo pieces before serving.
