Equipment

  • Toaster or Oven
  • Small spreading knife

Ingredients

  • 8 slices white bread preferably lightly toasted
  • 4 oz cream cheese softened for easy spreading
  • 1 tablespoon fresh dill finely chopped
  • 1 medium large cucumber sliced thinly, about 20 slices
  • 1 teaspoon lemon juice to prevent browning on cucumber slices
  • to taste salt and pepper for seasoning the spread

Instructions

  • Begin by toasting the bread slices until they are light golden and crispy, then let them cool slightly.
  • While the bread cools, mix the softened cream cheese with finely chopped dill, a squeeze of lemon juice, and a pinch of salt and pepper until smooth and fragrant.
  • Spread a thin layer of the herbed cream cheese evenly over each bread slice using a small spreading knife for a smooth, thin coating.
  • Arrange cucumber slices in a single layer on top of the spread, slightly overlapping for full coverage but keeping the slices thin and delicate.
  • Carefully place another slice of bread on top, pressing gently to set the layers, then trim the crusts with a sharp knife for a neat, uniform edge.
  • Repeat with the remaining slices to make a total of eight sandwiches, then cut each into quarters or fun shapes if desired.
  • Arrange the finished sandwiches on a platter, ready to serve with a touch of elegance and freshness.

Notes

Ensure the bread is not over-toasted to keep it tender enough for easy bites. Thin cucumber slices make for a prettier, crunchier sandwich. Lightly pressing the layers together helps them hold their shape when cut.
