CHICKEN FAJITAS

  • 3 chicken breasts boneless and skinless
  • 1 onion thinly sliced
  • 3 bell peppers thinly sliced
  • 3 tbsp olive oil
  • ½ lime
  • 3 cloves garlic minced

FAJITA SEASONING

  • ½ tbsp chilli powder
  • ½ tbsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp pepper

SERVING

  • tortillas
  • sour cream
  • avocado

Instructions

FAJITA SEASONING

  • Add the fajitas seasoning ingredients to a small mixing bowl and stir together.
  • The seasoning is ready. Keep it aside.

CHICKEN FAJITAS

  • Generously sprinkle the fajita seasoning on both sides of the chicken and use your fingers to press it into the chicken.
  • Add seasoned chicken, olive oil, minced garlic and lime juice and combine them well. Let it marinate for at least 30 minutes.
  • After 30 minutes, heat the oil in a large skillet over medium heat. Sear the chicken breasts for about 7-8 minutes on each side. Use tongs or spatula to flip the chicken.
  • While your chicken is cooking, cut the bell peppers and onion into thin slices.
  • Once the chicken has finished cooking, remove it to a plate and let it rest for a couple of minutes. Add the bell peppers and onion to the same skillet over medium heat and saute for 4-5 minutes, stirring frequently.
  • When the bell peppers are just about done sauteing, slice the chicken breasts into strips.
  • Add the chicken back into the skillet, add a squeeze of fresh lime juice, and stir everything together.

SERVING

  • Warm up the tortillas on the stovetop or in the microwave.
  • Spoon the chicken and vegetable mixture onto each tortilla.
  • Add optional toppings like shredded cheese, sour cream, or avocado.
  • Roll up the tortillas and enjoy your delicious chicken fajitas!

Notes

  1. Marinate for Flavor: Let the chicken marinate for at least 30 minutes. Longer marination, even up to overnight, allows the flavors to penetrate the chicken deeply, resulting in richer, tastier fajitas.
  2. Hot and Quick Cooking: Use a hot skillet or pan to cook the chicken and veggies over high heat. Quick cooking ensures a nice sear on the chicken while keeping it juicy and the vegetables vibrant and slightly crisp.
