Equipment

Ingredients

  • 200 g dates chopped
  • 250 ml boiling water
  • 1 tsp baking soda
  • 85 g butter
  • 170 g brown sugar
  • 2 eggs
  • 170 g all-purpose flour
  • 1 tsp baking powder

Toffee Sauce

  • 100 g butter
  • 150 g brown sugar
  • 200 ml heavy cream

Instructions

  • Preheat the oven and grease your baking dish
  • Chop dates and soak them in hot water with baking soda
  • Cream butter and brown sugar until light
  • Add eggs gradually, mixing well
  • Fold in flour and softened dates
  • Pour batter into baking dish
  • Bake until the sponge is set and springy
  • Prepare the toffee sauce in a saucepan
  • Pour warm sauce over the pudding
  • Serve immediately

Notes

Note: If baking in a larger dish instead of individual ramekins, allow 30–35 minutes and bake until a skewer inserted comes out clean.
