These Halloween Eyeball Pork Meatballs are a spooky and delicious twist on classic homemade meatballs. Juicy seasoned pork meatballs are baked until tender, coated in a rich marinara sauce, and topped with mozzarella and olives to create creepy edible eyeballs. Perfect for Halloween parties, family dinners, or a fun themed appetizer, these meatballs are festive, flavorful, and easy to make.
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Add ground pork, breadcrumbs, egg, Parmesan cheese, garlic, parsley, Italian seasoning, salt, and black pepper to a large bowl. Mix gently until the ingredients are evenly combined. Avoid overmixing to keep the meatballs tender.
Shape the pork mixture into 16 small meatballs, about 1½ inches in size. Place them evenly on the prepared baking sheet.
Bake for 18–20 minutes, until the pork meatballs are cooked through and reach an internal temperature of 160°F (71°C).
While the meatballs bake, warm the marinara sauce in a large skillet over medium heat.
Add the cooked pork meatballs to the sauce and gently coat them. Simmer for 2–3 minutes to allow the flavors to combine.
Place a mozzarella pearl on top of each meatball to create the white part of the eyeball.
Add a small slice of black olive in the center of each mozzarella piece to create the pupil.
Arrange the eyeball pork meatballs on a serving platter with extra marinara sauce underneath for a spooky "bloody" Halloween effect. Serve.
Notes
Ensure eyeballs are fresh or properly thawed for the best texture. Be cautious when handling raw ingredients and cook thoroughly to safe temperatures. This dish is perfect for those seeking culinary adventures and unique flavors.
