Add the cottage cheese, eggs, almond flour, baking powder, sweetener, vanilla extract, salt, and cinnamon to a blender. Blend until the mixture is smooth and creamy, stopping to scrape down the sides as needed.
Allow the pancake batter to rest for about 3–5 minutes. This gives the almond flour time to absorb some of the moisture and helps create thicker, softer pancakes.
Heat a large nonstick skillet or griddle over medium-low heat. Lightly grease the surface with butter or avocado oil.
Pour about ¼ cup of batter onto the hot skillet for each pancake. Keep the pancakes fairly small, as keto pancakes are more delicate than traditional flour pancakes.
Cook for 2–3 minutes, or until the edges look set and small bubbles begin appearing across the surface.
Carefully slide a thin spatula underneath each pancake and flip. Cook for another 1–2 minutes, until the second side is golden brown and the center is cooked through.
Transfer the finished pancakes to a plate and repeat with the remaining batter, lightly greasing the skillet again when necessary.
Serve warm with butter, fresh berries, or your favorite sugar-free maple syrup.
