  • Chicken breasts thick and even – 4 pieces
  • Garlic finely minced or garlic paste – 2 cloves
  • Lemon juiced – 1 large
  • Frozen peas rinsed – 1 cup
  • Extra-virgin olive oil – 3 tablespoons
  • Salt – to taste
  • Freshly cracked black pepper – to taste
  • Fresh parsley or dill optional, for garnish – 2 tablespoons
  • Chili flakes optional, for heat – pinch

Instructions

  • Season chicken breasts with salt and pepper
  • Heat olive oil in a large skillet over medium heat
  • Add chicken and cook for 5–7 minutes per side until golden and fully cooked (internal temperature of 165°F or 74°C)
  • Remove chicken from the skillet and set aside
  • Add minced garlic to the skillet and cook for about 30 seconds until fragrant
  • Pour in lemon juice and bring to a simmer
  • Add peas to the skillet and cook for 2–3 minutes until heated through
  • Return chicken to the skillet and toss to coat in the lemon-garlic sauce
  • Garnish with fresh herbs and chili flakes (if using)
  • Serve warm
