This creamy rice pudding is a comforting dessert featuring tender rice, golden raisins, and a hint of vanilla, perfect for satisfying your sweet cravings.
Bring 1 ½ cups of cold water to a boil in a saucepan over medium heat.
Stir in ¾ cup of uncooked white rice. Reduce heat to low, cover, and simmer until rice is tender and water is absorbed, about 20 minutes.
In a clean saucepan, combine cooked rice, 1 ½ cups of milk, ⅓ cup of sugar, and ¼ teaspoon of salt. Cook over medium heat, stirring often, until thick and creamy, about 15 minutes.
Stir in the remaining ½ cup of milk, beaten egg, and ⅔ cup of golden raisins. Cook for an additional 2 minutes, stirring constantly.
Remove from heat and stir in 1 tablespoon of butter and ½ teaspoon of vanilla extract until combined.
