  • 1 piece ham bone with some meat on
  • 2 cups diced ham cooked
  • 1 cup chopped onion
  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 4 cups chicken broth
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Heat olive oil in a large pot over medium heat until shimmering.

  • Add chopped onion to the pot and sauté until transparent.

  • Bring the mixture to a boil over high heat.
  • Reduce heat to low and simmer uncovered for 30 minutes.
  • Remove the ham bone from the pot; shred any meat from the bone and add it back to the pot.

  • Simmer for another 10 minutes, allowing flavors to meld.
