  • Fresh asparagus – 2 pounds 900 grams
  • Herbs de Provence – 2 teaspoons 4 grams
  • Kosher salt – 1 teaspoon 6 grams
  • Pancetta slices – 5–6 slices 150 grams
  • Lemon juice 1 tablespoon
  • Warm water – 1 tablespoon
  • Egg yolks – 2 large 36 grams
  • Clarified butter – 1/2 cup
  • Hot sauce – a few dashes
  • Creole seasoning – a pinch
  • Cayenne pepper – a pinch
  • Salt – to taste
  • Extra virgin olive oil – 1 tablespoon

Instructions

  • Preheat oven to 200°C (400°F).
  • Trim asparagus ends.
  • Wrap pancetta slices around bundles of asparagus.
  • Place on baking tray and drizzle olive oil.
  • Sprinkle herbs, salt, and seasoning.
  • Bake for 15–20 minutes until pancetta is crisp.
  • Prepare sauce by whisking egg yolks, butter, lemon juice, and seasoning.
  • Serve asparagus warm with sauce.
