Instructions
Preheat oven to 200°C (400°F).
Trim asparagus ends.
Wrap pancetta slices around bundles of asparagus.
Place on baking tray and drizzle olive oil.
Sprinkle herbs, salt, and seasoning.
Bake for 15–20 minutes until pancetta is crisp.
Prepare sauce by whisking egg yolks, butter, lemon juice, and seasoning.
Serve asparagus warm with sauce.
