Sensational Somen Noodle Recipe

Equipment

  • Large pot for cooking noodles
  • Colander or sieve for draining noodles
  • Large mixing bowl
  • Serving plates or bowls

Ingredients

  • 7-8 ounces Somen noodles
  • 1,1/2 tbsp  sugar
  • 2 tbsp sesame oil
  • vegetables such as cucumber, carrots, cabbage
  • 4 tbsp soy sauce
  • 1/2 to 1 tsp salt 
  • Easy Teriyaki Tofu

Instructions

  • Cook somen noodles according to package instructions.
  • Drain and rinse noodles under cold water.
  • In a large bowl, mix together remaining ingredients.
  • Add cooked noodles to the bowl and gently coat with sauce.
  • Serve noodle salad with fresh vegetables and preferred protein.

Notes

  • When cooking your somen or soba noodles, keep a few ice cubes or cold water handy. As the noodles boil, toss in a couple of ice cubes or pour in some cold water. This trick maintains their elasticity and prevents them from becoming soggy later on.
  • After draining the noodles, give them a good rinse under cold water. This step helps remove any excess starch, leaving you with perfectly cooked and non sticky noodles.
