  • 2 cloves garlic minced

  • 2 red bell peppers bell peppers sliced
  • 4 corn tortillas corn tortillas
  • 1/2 cup sour cream
  • 1 tablespoon lime juice for sauce
  • 1/2 teaspoon cumin ground
  • 1/4 cup pickled jalapeños sliced
  • 1 red onion onion thinly sliced
  • fresh cilantro cilantro chopped, for garnish

Instructions

  • Mix lime juice, chili powder, minced garlic, salt, and oil in a bowl. Add chicken strips and toss to coat evenly. Marinate for at least 15 minutes to infuse flavor.
  • Heat your skillet or grill pan over medium-high heat until hot. Place the marinated chicken in the pan and cook for 6-8 minutes, flipping once, until golden brown and cooked through. The chicken should reach an internal temperature of 75°C (165°F) and juices should run clear.
  • While the chicken rests for a few minutes, place sliced bell peppers directly on the hot pan or grill. Char them for about 4-5 minutes until blackened and blistered, turning occasionally to develop smoky flavor and tender insides.
  • Warm the corn tortillas in a dry skillet or microwave for about 30 seconds until soft and pliable. Keep them wrapped in a towel to stay warm.
  • Slice the rested chicken into thin strips. Prepare the cilantro lime sauce by mixing sour cream, lime juice, and cumin in a small bowl until smooth and tangy.
  • Assemble each taco by layering sliced chicken, charred peppers, sliced onions, and a drizzle of cilantro lime sauce. Top with sliced pickled jalapeños and chopped cilantro for a fresh burst.
  • Finish by squeezing fresh lime over the tacos and garnishing with extra cilantro if desired. Serve immediately while warm and juicy.

Notes

For extra flavor, sprinkle with a pinch of smoked paprika or add shredded cheese. These tacos are perfect for a quick, satisfying meal packed with bold flavors.
