Ingredients

  • 1 cup shredded Cheddar or Monterey Jack cheese melts beautifully
  • 1/2 cup refried beans refried beans creamy and hearty
  • 1/4 cup sliced black olives or sliced black beans for eyes
  • 1/4 cup strips red bell pepper for mouths or scars
  • optional sour cream, salsa, or guacamole for serving

Instructions

  • Preheat your skillet over medium heat until warm, and prepare your ingredients for easy assembly.
  • Lay a tortilla flat on a cutting board and spread a thin layer of refried beans over half of it, then sprinkle generously with shredded cheese.

  • Use sliced black olives or beans to create eyes, placing them on the cheese layer, and add a strip of red bell pepper for a mouth, shaping a spooky face.

  • Top with another tortilla and gently press down to seal the edges, then carefully transfer the assembled quesadilla to the hot skillet.
  • Cook for about 3-4 minutes until the bottom is golden and crispy, then flip carefully using a spatula, listening for a satisfying crunch.
  • Cook the other side for another 3-4 minutes until golden brown and cheese is melted and bubbly inside.
  • Remove the quesadilla from the skillet and let it rest for a minute, then cut into wedges, revealing the gooey, cheesy interior and fun decorations.
