  • 1 cup brown or green lentils rinsed
  • 1 28-ounce can crushed tomatoes
  • 3 cups vegetable broth
  • ½ cup dry red wine or additional vegetable broth
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon maple syrup
  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

For Serving

  • Cooked pappardelle rigatoni, or other pasta

Notes
