Ingredients

Spiced Apple Butter

  • 5 �medium apples
  • 1 cup apple cider
  • 3/4 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1/2 tsp freshly ground nutmeg

Caramel Sauce

  • 1 cup granulated sugar
  • 1/4 cup �of water
  • 3/4 cup heavy cream
  • 3 tbsp unsalted butter
  • 3/4 tsp kosher salt, or to taste

Rum Ice Creams

  • 2 cups whole milk, divided
  • 1 tbsp tapioca starch
  • 3 tbsp cream cheese, softened
  • 1/4 tsp salt
  • 1,1/4 cups �heavy cream
  • 1/2 cup sugar
  • 2 tbsp light corn syrup
  • 1 tsp vanilla extract
  • 1/4 cup rum
  • 1 cup candied pecans, roughly chopped.

Instructions

  • Simmer apples in apple cider until tender, puree, and mix with spices. Bake until butter browns.
  • Make caramel by cooking sugar until amber, then adding cream, butter, salt, and apple butter. Set aside.
  • Create ice cream base by heating milk, cream, sugar, corn syrup, and vanilla bean. Thicken with cornstarch slurry.
  • Whisk hot mixture into cream cheese until smooth, then stir in vanilla extract and rum.
  • Chill ice cream base, then freeze according to ice cream maker instructions. Swirl in candied pecans and apple butter caramel before freezing until solid.
