Peel and core apples, then cut them into 1/2-inch cubes.
Beat eggs and sugar in a stand mixer on high speed for 8 minutes until pale and thick.
Gently fold in flour with a spatula until just combined.
Fold in the apple cubes evenly throughout the batter.
Pour batter into the prepared pan and bake for about 1 hour 10 minutes, until the top is dark brown and a toothpick comes out clean.
Cool the cake for 20-30 minutes, dust with powdered sugar, slice, and serve.
