  • 3 large eggs room temperature
  • 1 cup light brown sugar
  • 1 cup + 2 tbsp all purpose flour

Instructions

  • Preheat oven to 350°F, line the bottom of an 8-inch springform pan with parchment paper, and grease the sides.

  • Peel and core apples, then cut them into 1/2-inch cubes.
  • Beat eggs and sugar in a stand mixer on high speed for 8 minutes until pale and thick.

  • Gently fold in flour with a spatula until just combined.

  • Fold in the apple cubes evenly throughout the batter.
