Preheat your oven to 375°F (190°C).
Unroll the thawed puff pastry sheets and cut into appropriate sizes for your chicken breasts.
Mix the Alouette cheese and Dijon mustard in a bowl.
Season the chicken breasts with salt and pepper, then coat with the cheese mixture.
Place the chicken on the puff pastry, folding the pastry around the chicken and sealing the edges.
Brush the top of the pastry with the beaten egg and a little water.
Bake for 30-35 minutes, or until the pastry is golden and chicken reaches an internal temperature of 165°F (74°C).
