Preheat your oven to 375°F (190°C).
In a large bowl, mix sugar, flour, and salt.
Add beaten eggs, half and half, melted butter, and vanilla. Whisk until smooth.
Gently fold in chopped rhubarb.
Pour the mixture into an unbaked 9" pie crust.
Place the pie dish on the center oven rack.
Bake for 45–50 minutes until the center is set and the crust is golden.
Let the pie cool on a rack before slicing and serving.
