Preheat the oven to 400°F.
Roll out chilled pie dough into a 12-14 inch circle and place in a 9-inch pie dish. Trim excess dough and crimp the edges. Freeze while preparing the filling.
In a bowl, mix flour, sugar, cinnamon, and salt for the crumble. Add melted butter and stir until large clumps form. Chill if necessary to form crumbles.
Peel, core, and slice apples. Toss with lemon juice, sugar, flour, cinnamon, and nutmeg.
Pour the apple mixture into the pie crust, pressing down and mounding slightly in the center.
Bake for 20 minutes at 400°F, then reduce the temperature to 350°F.
Add the crumble topping over the apples and bake for 1 hour, until the crust is golden and apples are soft.
Let the pie cool completely at room temperature (about 4 hours) before slicing.
