This one-pan chicken and sweet potato dish is comforting, flavorful, and fresh — loaded with natural sweetness, subtle spice, and clean ingredients. It’s healthy, satisfying, and perfect for a weeknight dinner.
Chop the chicken and sweet potatoes into even pieces so they cook at the same pace.
In a mixing bowl, toss the chicken and sweet potatoes with olive oil, paprika, cumin, salt, and pepper.
Warm a large skillet over medium-high heat so it's hot enough to sear the chicken properly.
Sear the chicken until it turns golden on both sides, usually 5–6 minutes then remove it and set it aside.
Using the same skillet, add the sweet potatoes and sliced onions so they pick up all the flavor left behind.
Cook them for about 8–10 minutes, stirring occasionally, until they start to caramelize and turn tender.
Once the potatoes are almost done, I add the chicken and minced garlic to the skillet and let everything finish cooking for another 3–4 minutes.
I turn off the heat, let it rest briefly, and brighten the dish with lemon juice or herbs before serving.
