Equipment

  • Large oven-safe skillet or cast iron pan
  • Cutting Board and Knife
  • Spatula or Tongs

Ingredients

  • 1 pound Boneless Chicken Breasts or Thighs
  • 2 Medium Sweet Potato peeled and diced
  • 2 tablespoon Olive Oil
  • 1 Small Red Onion
  • 2 Garlic Cloves minced

For the Seasoning

  • 1 tsp Smoked Paprika
  • ½ tsp Cumin
  • Salt and Pepper to taste
  • Chili Flakes Optional
  • Squeeze of Lemon Juice Optional

Instructions

  • Chop the chicken and sweet potatoes into even pieces so they cook at the same pace.
    Prep the Vegetables and Chicken
  • In a mixing bowl, toss the chicken and sweet potatoes with olive oil, paprika, cumin, salt, and pepper.
    Season Everything
  • Warm a large skillet over medium-high heat so it's hot enough to sear the chicken properly.
  • Sear the chicken until it turns golden on both sides, usually 5–6 minutes then remove it and set it aside.
  • Using the same skillet, add the sweet potatoes and sliced onions so they pick up all the flavor left behind.
    Let Them Soften and Brown
  • Cook them for about 8–10 minutes, stirring occasionally, until they start to caramelize and turn tender.
  • Once the potatoes are almost done, I add the chicken and minced garlic to the skillet and let everything finish cooking for another 3–4 minutes.
  • I turn off the heat, let it rest briefly, and brighten the dish with lemon juice or herbs before serving.
    Finish and Serve
