Chop the chicken and sweet potatoes into even pieces so they cook at the same pace.
In a mixing bowl, toss the chicken and sweet potatoes with olive oil, paprika, cumin, salt, and pepper.
Warm a large skillet over medium-high heat and sear the chicken until it turns golden on both sides, usually 5–6 minutes.
In same skillet, add the sliced onions and cook them for about 8–10 minutes.
Once the potatoes are almost done, add the minced garlic to the skillet and let everything finish cooking for another 3–4 minutes.
