Ingredients

  • 1 pound Boneless Chicken Breasts or Thighs
  • 2 Medium Sweet Potato peeled and diced
  • 2 tablespoon Olive Oil
  • 1 Small Red Onion
  • 2 Garlic Cloves minced

For the Seasoning

  • 1 tsp Smoked Paprika
  • ½ tsp Cumin
  • Salt and Pepper to taste
  • Chili Flakes Optional
  • Squeeze of Lemon Juice Optional

Instructions

  • Chop the chicken and sweet potatoes into even pieces so they cook at the same pace.

  • In a mixing bowl, toss the chicken and sweet potatoes with olive oil, paprika, cumin, salt, and pepper.

  • Warm a large skillet over medium-high heat and sear the chicken until it turns golden on both sides, usually 5–6 minutes.
