Finely dice the chicken breasts and place them in a mixing bowl.
Add eggs, mayonnaise, flour, shredded mozzarella, dill, salt, and pepper. Mix well.
Preheat a skillet over medium heat with olive oil.
Scoop spoonfuls of the mixture into the skillet and gently flatten them.
Cook for about 3–4 minutes per side or until golden and cooked through.
Remove onto a paper towel-lined plate to drain excess oil.
Serve warm with garlic aioli or your favorite dip.
Optional: Garnish with extra fresh dill or a squeeze of lemon juice.
