Marinate chicken lollipops with ginger garlic paste, chili powder, spice powder, salt, and cornstarch. Rest for 15–30 mins.
Heat oil in a pan and deep-fry the marinated chicken on medium flame until golden and crispy. Drain on paper towels.
In a small pan, heat oil and sauté chopped onion, ginger, and garlic until fragrant.
Add soy sauce, vinegar, red chili sauce, sugar, salt, and water. Simmer for 2–3 minutes.
Toss the fried chicken in this hot sauce mixture until coated well.
Cook for another minute so the sauce thickens and clings to the chicken.
Garnish with chopped spring onions or celery.
