  • 2 tablespoons olive oil
  • 1 large yellow onion diced
  • 1 red bell pepper chopped
  • 4 garlic cloves minced
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons ras el hanout
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon cayenne pepper optional
  • 2 tablespoons tomato paste
  • 1 (14-ounce) can diced tomatoes
  • cups vegetable broth
  • 2 cups butternut squash peeled and cubed
  • 2 medium carrots sliced
  • 2 15-ounce cans chickpeas, drained and rinsed
  • ½ cup chopped dried apricots or Medjool dates
  • 2 bay leaves
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • ¼ cup chopped fresh parsley or cilantro

Instructions

  • Heat the olive oil in a Dutch oven over medium heat. Add the onion and cook for 5 to 6 minutes until softened.

  • Add the ras el hanout, cumin, coriander, cinnamon, turmeric, cayenne, and tomato paste. Stir constantly for about 1 minute to toast the spices and deepen their flavor.

  • Pour in the diced tomatoes and vegetable broth, scraping the bottom of the pot to loosen any browned bits.

  • Add the butternut squash, carrots, chickpeas, dried apricots, bay leaves, salt, and black pepper. Stir everything together until well combined.

  • Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 35 to 40 minutes, stirring occasionally, until the vegetables are fork tender and the broth has thickened slightly.

Notes

  • Ras el hanout gives the tagine its signature Moroccan flavor, but a blend of cumin, paprika, coriander, cinnamon, and turmeric also works well.
  • Dates create a richer sweetness, while dried apricots add a bright, fruity flavor.
  • Sweet potatoes, zucchini, cauliflower, or eggplant are excellent substitutes for butternut squash.
  • The stew thickens as it rests and tastes even better the following day.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Freeze for up to 3 months and thaw overnight before reheating.
