Make the Pie Crust: Process flour, sugar, and salt in a food processor. Add butter and shortening; pulse until crumbly. Mix in more flour and pulse again.
Add Liquid: Sprinkle vodka and water over the dough. Mix with a spatula, press into a ball, and roll into a 13-inch circle. Transfer to a pie plate, trim edges, and refrigerate for 2+ hours.
Blind Bake the Crust: Preheat oven to 350°F. Line the crust with foil, fill with sugar, and bake for 40 minutes. Remove sugar and foil, and cool.
Make Apple Filling: Slice apples and toss with sugar, cinnamon, and salt. Cook apples in butter until tender. Drain excess juice and reduce it with cream to a thick syrup. Add apples to the crust and pour syrup on top.
Make Streusel Topping: Mix flour, sugar, and melted butter until crumbly. Sprinkle over the apple filling.
Bake the Pie: Increase oven to 425°F. Bake pie on a baking sheet for 10–20 minutes, until topping is golden brown.
Cool and Serve: Cool pie to room temperature on a wire rack. Slice and enjoy!
