Preheat your oven to 315°F.
Spray a bundt pan with non-stick baking spray.
In a mixer bowl, beat butter for 2 minutes on high speed.
Slowly add sugar and salt, continue beating for 7 more minutes until pale yellow and fluffy.
Add eggs one at a time, mixing well after each addition.
Turn mixer to low speed and gradually add flour in two parts.
Pour in 7 Up and lemon extract, mix until just combined.
Pour batter into prepared bundt pan.
Bake for 1 hour and 15 - 20 minutes, until a toothpick comes out clean.
Cool in pan on a wire rack for 10 minutes, then invert onto a serving plate.
