  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 garlic cloves crushed
  • 250 g ½lb mushrooms sliced
  • ½ tsp chilli flakes
  • 1 tsp dried oregano
  • salt and pepper to taste

For the grilled cheese

  • 1 tsp lemon juice
  • 1 cup mozzarella cheese grated
  • 8 slices sourdough bread
  • butter
  • 1 cup mature or sharp cheddar cheese grated

Instructions

  • Heat a large frying pan over medium-high heat and melt the butter.
  • Add the mushrooms to the pan and cook until golden brown.

  • Stir in the garlic, chili, and oregano, cooking for another minute.

  • Season the mixture with salt, pepper, and a splash of lemon juice. Remove from heat and set aside.
  • Mix the mozzarella and cheddar cheese, then divide the cheese between four slices of bread.
